Breakfast Toast 2 Ways

I looooooove me a good breakfast toast. It's quick and FILLING AF. I'm often asked if it's okay to eat bread and if so, what kind of bread I eat. So let's start there.

It's funny how things change over time. I used to eat white carbs like my life depended on it. Then in college I was diagnosed with an underactive thyroid and long story short -- realized I wasn't invincible. So, I eliminated all carbohydrates other than vegetables, healing my body without the medication. Now I've come full circle and I find that my body can tolerate a little bit of high quality sourdough bread and whole grains.

I really don't think there is ONE thing that works for everyone. When you eat whole grains, do you feel good? Do they contribute to your health and energy? If yes, then go for it. If no, then maybe experiment with cutting back or eliminating altogether. This is where it's important to cultivate self-awareness and to be completely honest with yourself. I don't know about you, but I want to enjoy food and life in a way that allows me to continue to go on adventures and travel the world. It's one of the highest priorities on the list.  

I'm extremely picky about the bread I buy -- it's either from Whole Foods or the local farmer's market. Look for the highest quality sourdough you can find without preservatives and sugar. This kind of bread is NOT soft. It's crusty -- like they do it in Italy dipped in that divine, fresh olive oil. To keep it for longer I just stick the loaf in the freezer. 

Anyway, I love a good breakfast toast in the morning -- especially on days when I'm rushing to get to work and don't have time to slice vegetables. It's just so cozy and comforting, ya know? Like a little warm hug to start your day. Add in a cup of coffee and oh my, life just doesn't get any better than that!

Here's the sich:

Throw a piece of toast into the oven (or toaster) on 350 degreesish. (Suuuuper tough, I know)

Topping One:

  • Avocado
  • Everything Bagel seasoning (from trader joes)
  • a teeny dash of salt
  • red pepper flakes
  • a drizzle of lemon juice (crucial)

Topping Two:

  • Crunchy Almond Butter
  • Sliced Apples
  • Cinnamon

The healthy fats from the almond butter and avocado keep your skin young and hydrated and your belly nice and full. They're packed with vitamins and minerals that reduce inflammation (esp avocado) so eat up!
