Berry Overnight Oats

I'm working on waking up earlier to make space for some extra 'me' time in the morning without feeling rushed to get to work. Part of that time would ideally consist of preparing a legit breakfast to sit down and enjoy. Being present while you're eating and consciously chewing your food helps the nutrients to break down and digest more completely in your body.

Unfortunately, I just don't always have that kind of time and a lot of people ask me how they can get a nourishing breakfast that can be prepared and packed quickly -- so here we are. You can certainly make my smoothie ahead of time in larger batches to grab and go in the morning, but another option is overnight oats. I like to prepare them in mason jars (#hipsterlife) so they can be taken on the train and eaten whenever it's convenient. 


  • 2 cups rolled oats
  • 1/3 cup chia seeds
  • 2¾ cup s homemade almond or coconut milk
  • 1/4 cup maple syrup
  • splash of vanilla extract (optional)
  • about 2 cups mix of fresh or frozen blueberries and raspberries, or any other berries of choice
  • 1-2 tbsp almond butter per jar


  1. Combine the oats, chia seeds, almond milk, maple syrup and vanilla in a medium mixing bowl. 

  2. Spoon the oats between 2-3 clean jars in layers, alternating them with fresh or frozen blueberries, raspberries or any other berries of choice and a layer of almond butter. Cover the jars with their lids and place in the refrigerator overnight. Enjoy for breakfast.
